No Butter Cakes
I love my butter but sometimes you just have to cut down. And I rather skip butter in recipes that taste amazing even without it, than be forced to eat my slice of toast unbuttered. Gasp!

This recipe is for everyone. Butterless, gluten-free, and dairy-free. And it is so delicious, nobody can tell it’s “healthy”. *snicker*
I love chiffon cakes. They are so soft and fluffy and if I have to think of a negative here, I’d say that you can’t eat just one slice and it’s not good for the waistline. But I am way past that stage. *sigh*
I am not a fan of using fruits in baked desserts. Mangoes and apples taste best eaten fresh. And they are seasonal fruits, so I always end up feeling guilty for wasting a fresh fruit in a cake or a pie. Especially apples. This cake is an exception. It is a nice sticky crumbly texture and it almost tastes like pudding. Delicious, rich pudding.
