Blend all ingredients together in a processor.
Keep licking to check salt, heat, and tanginess till you have reached the right consistency in texture and flavour.
Spread on pita bread and make a wrap or serve as a dip for chips.

I am pretty addicted to hummus. It’s healthy, easy to whip up and a perfect dip for just about anything.I bring it to school with me in my school lunch and have already turned my “never seen hummus ever” friends into addicts too. I have these guys dippin’ bell peppers and pita chips..haha They are forever hummus converts!
I have never understood the concept of layered dips. They look like pudding and how will you serve it without making a mess of all the flavours. No way a chip can be dipped through all the layers in one go right? So when I tried he layered dip, I served them in bread bowls. :D
I don't recall aubergine being bought at home ever. So when my husband bought a whole kilo of them home, I was pretty clueless. I only knew of middle eastern dips, but nothing Indian. And having done a good job cooking up until then, I obviously didn't want to ask him to make his baingan ka bartha and risk admitting not knowing something. So I googled my bum off till I found something that sounded appetising enough. And easy to attempt. How can anything with curd go wrong anyway. It's sweet from the onion, spicy from the chillies, pungent from the garlic, and the almost bitter from the deep fried aubergine. It is an amazing union of flavours. So awesome, it is now a weekly regular.
Got these rice paper rolls from someone who visited Vietnam. Very interesting texture, and very different from the regular spring roll.
