More often than not, I'm drawn to the simplest recipes which make light but filling meals when the tummy rumbles but shouldn't grumble. This is one of those recipes. Kingfish or Seer is available nearly all year round but you can use any firm white fleshed fish in its stead. This meal is ideal for fuss free dinner. Just make sure you buy the pineapple already peeled and ready to slice / cut... :)
This sauce is native to Argentina. It is served with all Grilled meats, Beef, Chicken and Fish etc. It has viberant color and very tasty. Tonight for our dinner I am serving this on Pulled Roasted Chicken served with Quinoa and steamed vegetables. Sauce is easy to make and can be refregerated for 10 days. So make some extra and keep it handy for your use.

Delicious, seems to be an understatement when I am trying to explain what I felt when I had this dish. The amazing flavor drawing out of the combination of mushroom, spinach and the herbs is just irresistible and is sure to be palatable.
...For lack of a better name, I'm gonna call these babies "Global Integration Quesadillas". Stuffed with Angus Polska Kielbasa sausage, onions, peppers, mushrooms; seasoned with Italian herbs and ground cumin for a middle eastern twist; and held together with melted pepper jack cheese. Addictive stuff, I tell you....
