More often than not, I'm drawn to the simplest recipes which make light but filling meals when the tummy rumbles but shouldn't grumble. This is one of those recipes. Kingfish or Seer is available nearly all year round but you can use any firm white fleshed fish in its stead. This meal is ideal for fuss free dinner. Just make sure you buy the pineapple already peeled and ready to slice / cut... :)

Stuffed with Angus Polska Kielbasa sausage, onions, peppers, mushrooms; seasoned with Italian herbs and ground cumin for a middle eastern twist; and held together with melted pepper jack cheese. Addictive stuff, I tell you....
