A simple salad using farmer's market fresh ingredients with a tangy dressing that will have your mouth watering.
Crunchy Corn and Raisin Delight - simple yet delicious enough to forget about the cold winds billowing outside. You can of course be creative and do some toying with flavours to suit your palate. I have used corn in my version of this salad, but some finely chopped apples, fresh juicy grapes or any other fruit will do the job and keep the flavours balanced! The natural sweetness of the corn, raisin and carrot clubbed with the pungent and bitter yet sweet onion gives this salad a pleasing flavour. Though this recipe makes use of simple ingredients, the outcome is oodles and oodles of flavour!
Tim doesn’t stop talking about spinach in four hour body, so I’ve been trying to eat a ton of it. Here’s a chef salad I threw together to bolster my spinach intake. Cheese is a nono for the slow carb diet, so don’t add it if you don’t want to. Also make sure the dressing you use (I use greek or whatever vinegrette catches my eye at the grocery store) is slow carb okay. Also keep the tomatoes to a minimum (I do 4 per salad). I boiled a bunch of eggs at once and keep them in the fridge so assembling this salad is quick and easy. Depending on how much ham you pile on this can stand on its own as a lunch, but I’ve been eating it with soup.
