Tim doesn’t stop talking about spinach in four hour body, so I’ve been trying to eat a ton of it. Here’s a chef salad I threw together to bolster my spinach intake. Cheese is a nono for the slow carb diet, so don’t add it if you don’t want to. Also make sure the dressing you use (I use greek or whatever vinegrette catches my eye at the grocery store) is slow carb okay. Also keep the tomatoes to a minimum (I do 4 per salad). I boiled a bunch of eggs at once and keep them in the fridge so assembling this salad is quick and easy. Depending on how much ham you pile on this can stand on its own as a lunch, but I’ve been eating it with soup.
No fancy intro on this one, saw the recipe on pinterest and it sounded good. It was supposed to have turnips in it, but I found out my turnips had gone bad when I got home from the grocery store and at 2C and raining I wasn’t going out again. This was a momentus occasion, though: the first time I’ve bothered to blanch and ice bath a vegetable. Normally when when a recipe says to blanch something, I just put on Golden Girls while I cook. This turned out great, though. A satistfying side dish, I ate it with leftovers of my General Tso Chicken.
