I guess I love the word so much that I end up making these beauties to pronounce their name. Bruschetta simply means toasted bread but doesn't it sound musical, I guess every Italian dish sounds pleasing to one's ears :)
this is a great appetizer you can serve for an italian themed dinner... its easy to prep, and takes just 10 minutes to bake.
mix together the tomato, onion, garlic, oregano, basil, salt and pepper.
set aside to rest for about half an hour (you could do this ahead and keep it in the fridge).
pre-heat the oven to 190 degrees C.
slice the baguette on the diagonal, into 1/2" thick slices.
top each slice with some of the tomato mixture.
top each piece with grated mozzarella.
bake in the oven for about 10 minutes, just till the mozzarella is melted.

The reason why pizza is so amazing out there is the thin crust and amazing tomato sauce. But all that goodness isn’t the healthiest. So I tried to make my own healthy version of pizza using lavash bread. It only takes 15 minutes! A nice quick dinner or appetizer on one of those nights where you’re feeling lazy, which in my case is pretty much every other day.
this is a variant of the classic lasagne recipe. it uses lasagne-con-spinachi, or spinach lasagne sheets, so it has a green colour when cooked (its hulk food :P ). also, there are two sauces used for layering, a white ricotta sauce and the traditional bolognese meat sauce. definitely a must try for pasta lovers!
